Ingredients (serves 4)
•16 gamba prawns
•1 tablespoon extra virgin olive oil
•Rock salt / sea salt / salt flakes
Warm griddle pan, hotplate or frying pan till extremely hot. Add a little extra virgin olive oil and place gambas in pan.
Leave on high heat for 1 minute.
Sprinkle with rock salt, then turn over and cook other side for 1 minute.
Remove from heat and serve immediately, accompanied by green mayonnaise (see below).
Homemade Parsley Mayonnaise
•100 cl extra virgin olive oil
•Moscatel sherry vinegar
•2 sprigs parsley
•1 cup fish stock
Place the egg, salt and vinegar in hand-mixer cup/jug.
Crush parsley with fish stock in pestle and mortar until combined.
Whisk egg, vinegar and salt in hand-mixer, gradually adding the fish stock-parsley mix and keep whisking until it reaches the desired mayonnaise consistency. Add salt to taste.
